Cabling / faceplate / patch panel advice please

Hi

i'm getting fibre installed in 2 weeks or so, and as i'm decorating and getting plastering done in the house anyway i'm using it as an excuse to put in cat 5 cabling / patch panel / cabinet etc.
Some of the cabling is already run using decent cat5e cable, but i have a few queries that i'm not 100% certain about if anyone can advise please.

1. i'm going to move the master socket as its damaged and in wrong place, and install a new one with vdsl faceplate. I intended to run 2 cat5 cables from there (1 for voice, 1 for fibre) directly to back of patch panel (1 port for fibre, voice linked across 3 ports on patch panel). Am i correct that i only need to connect up 2 wires for each on patch panel?

2. Once fibre is connected to patch panel, what cable would i need to connect from patch panel port to sky router - i've seen the rj45 - rj11 on Run It Direct are they the right one?

3. Assuming i can now use standard cat5 patch leads to link the 3 voice ports on the patch panel to any other socket on patch panel, what would i need on the socket / room end to convert from cat5 socket to sky multiroom box or dect phone handset?

Any advice appreciated, as would any links to the kit i'd need on Run IT direct if possible to ensure i'm ordering the right bits.
